
This experiment turned out to be a great meal but could double as an appetizer at a party. Initially, it may seem tricky to do but it actually is not that difficult if you have a little bit of fine motor control with your fingers and a spoon.
Ingredients:
1 package of Stove Top Stuffing – Your choice of flavor
1 large chicken fillet or 2 medium size fillets
1 cup of Shredded cheese – your choice
1 package of Turkey Bacon
Steps:
1) Fry the chicken fillets with your favorite non-spicy seasonings. Dice into small cubes / chunks.
2) Prepare the Stove Top stuffing as normal but add in the diced chicken when you add in the bread packet. Mix well and set aside.
3) Cut the bacon in half and fry until it is 75% done. This is important to not overcook the bacon as it serves as the top and bottom of your sandwich. It can’t be crispy yet. If it is brittle, then it is useless for this recipe.
4) Lay out the mostly cooked bacon into rows. Sprinkle a very little bit of cheese on the bacon (this will serve as an edible glue).
5) Carefully add a teaspoon of stuffing / chicken mix on each bacon piece that has cheese on it. Place another bit of cheese on the top to “glue” the top bacon piece down.
6) Place another piece of bacon on top of the cheese / stuffing to make the top slice of the sandwich. Sprinkle a bit more cheese around the edges of the bacon slice.
7) Place a plate of these nearly cooked bacon sandwiches in the microwave oven long enough to melt the cheese on all of the bacon sandwiches.
Serve when ready. These are quite nummy and they actually are filling too.
